Apple Cinnamon Pancakes


It's great to add a little variety to pancakes. These pancakes are simple and healthy. Follow your pancake directions. Peel about 1 apple and chop finely. Add about 1 T. cinnamon to apples. Combine mixture to pancakes.

Top with apple syrup. (start this before you do the pancakes)

For apple syrup, chop about two medium peeled apples, combine 1 c. water, 1 tsp. cinnamon and 1/2 c. granulated sugar or brown sugar. Boil until desired consistancy, stirring occasionally. Serve when thickened.

The best Chicken Tortilla Soup

I love chicken tortilla soup, you know why? I love tomatoes!! This soup is so tasty and I think the cilantro, salsa verde, and lime juice is the key.

The Best Chicken Tortilla Soup (Serves about 4)

4 chicken breast tenders cooked and shredded
2 cans of petite diced tomatoes (no salt added)
1 T. Herdez green salsa verde (I love this stuff)
1 T. lime juice
1/2. c. chopped finely cilantro (food chopper is the best)
1 garlic clove chopped finely
1/4 c. chopped finely green pepper
1/2. c. onion chopped finely
1 T. salt
1 tsp. pepper
1 tsp, garlic powder
1 tsp. onion powder
1 tsp. basil
1 can of black beans
1 can of white beans or pinto beans (optional)
1 small can of corn (optional)
white or corn tortilla chips (corn chips work great too)
Shredded cheese (as much as you want)
sour cream (optional

In pot, combine cilantro, green pepper, onion, salsa verde and lime juice. Mix well.
Add tomatoes and salt, and all other seasonings. Mix well. Add shredded chicken, beans and corn(optional. Cook on medium heat and then reduce heat to simmer. Serve when hot. In bowl, place chips and cheese, add soup and then add more cheese and sour cream if you like.

Whole Wheat Pasta with Peanut Sauce and Veggies




Please note that this recipe can be eaten cold or warm. I have tried them both. In the summer, I like it cold, like a pasta salad should be, but a few days ago, I tried it warm. Both ways is good!!

Use a food processor if you have one. I have a great food chopper that cost 10.00, and it's fabulous!!

Serves about 4 (this is the served cold version recipe)

1 pd. of whole wheat speghetti noodles
1/2 c. shredded carrots
1/4. c. chopped scallions
1/4 c. chopped cilantro
1 garlic clove chopped
1/2. c. baby spinach leaves, chopped (optional)
1/2. c. soy sauce
1 c. peanut butter (softened)
1 tsp. honey
1 tsp. parsley
1 tsp. salt
1 T. lime juice
1/4. c. olive oil
1/4. c. peanuts chopped finely

Cook and drain speghetti noodles; set aside. Microwave peanut butter for about 1--15 sec. until soft and stirable. Combine peanut butter, soy sauce, honey, parsley, salt and lime juice. Stir. Combine all veggies together in large mixer bowl add speghetti and olive oil and toss until mixed together. Stir in peanut butter mixture. Toss noodles so they evenly are in peanut mixture. Serve or chill for a few hours. Top with chopped peanuts.

The Best Peanut Butter Bars


These peanut butter bars are so thick, moist and good. You must try them.

The Best Peanut Butter Bars

1 c. butter (softened)
1 c. brown sugar
1 c. creamy peanut butter (softened)
1/2 c. sugar
1 tsp. baking Soda
2 c. flour
2 c. oatmeal
2 eggs

Preheat oven to 375. Cream butter and sugars. Add peanut butter and eggs. Then add dry ingrediants. Press on an greased (or ungreased (peanut butter adds oil) 13 x 9 cassorole sheet (for thick bars). Bake for about 15-18 min. (Keep checking to make sure center is done with toothpick) Cool for 10 min. and spread a layer of peanut butter on top evenly. Let cool for about 10 min. Prepare frosting.

Rich Chocolate Frosting

1 T. butter
1/2- 1 c. semi sweet chocolate chips
1 tsp. vanilla
1/2 powdered sugar
1/4 c. milk

Melt butter with milk and vanilla, stirring constantly, add choc. chips and powdered sugar. Keep stirring until thick. Pour frosting onto bars.

Barbeque Chicken Sandwiches

This recipe is from the honey, brown sugar and barbeque chicken recipe. With the remaining 6 chicken breasts, plus sauce, shred chicken and pour enough sauce mixture to make it saucy. Put mixture on a hamburger bun and serve.

Honey, Brown Sugar, and Barbeque chicken


This recipe is sure to wow your day. The nice thing about making barbeque chicken is that you can make a couple of entrees of out one idea. Slow cook this in your crockpot for ultimate tenderness and flavor.

Honey, Brown Sugar and Barbeque Chicken Serves 4

In crockpot, combine the following (for two meal ideas, or if one, just cut recipe in half):

12 frozen chicken breast tenders
1 bottle of honey barbeque sauce
2 T. worchestershire sauce
1 T. Brown Sugar
1/4 c. water

Let crockpot do its thing and set for about 4 hours on high. Serve with rice.
