Quick Shrimp Stir-fry Meal Idea

This meal is considered a quick meal if you use a bag of stir-fry vegtebles.

In pan, saunte shrimp in olive oil and add:
1/4 tsp. red pepper
1 T. lemon juice

In seperate pan, combine stir-fry vegtebles and cook on medium to low heat. Add 1/4 c. olive oil to veggies, 1/4 c. low sodium soy sauce and let simmer until done. Combine shrimp to veggies, top over rice and enjoy!

Brocolli, Potato and Cheddar Soup

This soup is perfect for a cold winter's day. Enjoy!

Brocoll, Potatoe and Cheese Soup

1 can Campbell's cheddar cheese soup
1 c. fresh or frozen chopped brocolli
2 medium potatoes chopped
1/2 c. milk
2 1/4 c. chicken broth
1 tsp. salt
1 tsp. pepper
1 tsp. flour

In large saucepan, combine water and potatoes and cook until potatoes are tender.
Drain water and add in medium size pot: Potatoes, brocolli, chicken broth, salt and pepper. Cook on medium for about 5 min. or until brocolli is tender. Reduce to simmer and then add cheese soup, flour and milk. Simmer for about 10 more min.
