Fiesta Burritos


I decided to create a burrito stuffed with all my favorites for a healthy meal. These burritoes are great because you can freeze them and reheat anytime.

Fiesta Burrito

(Bean mixture)
2 c. pinto beans (prefer bagged beans over canned)
2 c. black beans
1 1/2 c. cooked rice
1/2 c. cilantro chopped (or add more)
1 garlic clove chopped finely
1/2 c. onion chopped
1/2 c. corn
1 jalepeno pepper (remove seeds)
1-1/2 c. Herdez green salsa verde
1 tsp. garlic powder
1 tsp. salt
1 tsp. onion powder
1 T. olive oil
1 T. lime juice
16-18 10 inch or larger whole wheat flour tortillas

Cook beans together according to directions. Cook rice and set aside. Once beans are done, drain and pour in large bowl. In another medium bowl, combine cilantro, garlic, onion, jalepeno, corn and olive oil together. Stir and set aside. Combine the following with beans and mix well: rice, green salsa, garlic powder, onion powder, salt, and lime juice. Combine the beans and rice mixture with the veggies and stir well. You have now created your bean mixture. Each burrito can be filled with this mixture and topped with mozerilla cheese and wrapped in foil for freezer.

Toppings for burritos (need to add fresh for each burrito) According to how many people.
1 avocado, mashed and turned to gaucomole (add about 1 tsp. lemon/lime juice, and 2 T. Herdez green salsa verde to it)
2 c. chopped tomatoes
2 c. shredded lettuce
1-2 c. chopped cucumber (remove peel)
4 c. mozerilla cheese
sour cream to taste!
Mmmmmm, Enjoy your delicious burrito. It should fill you up!!

Fried Potatoes


These potatoes are healthy, fast, and good. Slice each potatos thinly and fry in olive oil until crisp. Add red pepper, parsley, lemon juice and pepper to taste.

Blueberry Scones


These blueberry scones are so dang good, I just had to eat
several. I love them as a dessert or a snack.
4 1/2 c. flour
4 tsp. baking powder
1 T. sugar
3/4 c. country crock butter
1 c. milk
1 egg
1/2 c. warm water with 1 T. yeast
1-2. c. blueberries (drained) Frozen don't work as well.
1 c. olive oil or canola oil for frying

Mix all dry ingrediants together. Let yeast dissolve in warm water, then mix all wet ing. together and combine with dry. Add yeast and mix well. Let dough rise for about 1 hour. Carefully fold in blueberries and then let oil heat on medium high. Once hot, drop rounded balls of dough into oil. Turn over and let fry until done. Top with powdered sugar, or honey and butter.
