Shredded Cabbage and Cilantro Fish Tacos


My first fish taco was in 11th grade, in San Diego, during Happy Hour. I have never forgotten my first fish taco. Mom and I were walking through spanish town, looking at all the cool things. We entered this restaurant/bar and decided to both try a fish taco. Now, mom spent over 35 years in San Diego where she grew up, so she was very familiar with the tacos. I don't remember what kind of fish it was or what sauce they used, but I do remember shredded cabbage. Perfect on a fish taco. The fish tacos I made consisted of:

Varies by eaters:

1 c. shredded cabbage
1/2 c. chopped cilantro
Combine the two into a food chopper/processer
3-4 cooked fresh talapia (baked with olive oil and lemon pepper)
shredded cheddar cheese (We finally found the zero fat/cholestral cheddar cheese. It's finally back at Walmart).
salsa
tomato
Corn tortillas fried in olive oil.
Once fish and tortillas are done, break apart the very tender talapia and put on tortilla. Add cabbage and cilantro mixture, cheese and salsa. Enjoy!

I am posting this meal again.

St. Patrick's Day Meal (cabbage and hotdogs)

1 medium sized cabbage chopped
1 c. olive oil (use more if need be)
1 medium sized apple, chopped or cubed
1 large potato or 2 small, chopped or cubed
2 chopped hotdogs (I used smoked turkey hogdogs)
1 T. butter
1/2 tsp. salt (or sea salt)
1/2 tsp. pepper
1 T. flour
1 tsp. sugar
4 T. white vinegar

In a sautee pan, add olive oil, cabbage, apples and potatoes. Allow to cook on medium high heat, then turn down to medium low heat once cabbage,potatoes and apples become tender. Add butter and allow to cook on medium to low heat. Next, in small bowl, combine flour, sugar and vinegar and stir well. Add the vinegar mixture to cabbage and then add salt and pepper. Mix well and continue to stir. Let simmer until all are tender and ready to eat. While simmering, roast hotdogs on medium-high heat on stove, or you can add hot-dogs to mixture while simmering (whatever you like) Serve with mashed potatoes for a traditional St. Patrick's Day feast! Also good with couscous or rice.

Orange Pineapple Streusel Muffins


Orange and pineapple are a great combination. Try these!

Orange Pineapple Muffins

1/2 c. whole wheat flour (or just use 2 c. white flour)
1 1/2 c. white flour
1/2 t. salt
1/2 T. baking powder
1 8 oz can crushed pineapple
1 egg
3/4 c. milk
1/4 c. butter
1 T. sugar
1/2 T. brown sugar
1 T. orange extract

streusel topping
1/2 c. flour
1/3 c. brown sugar
1/4 c. meltedbutter
1 tsp. cinnamon
Combine all together and mix well.
1/2 c. reserved pineapple


Preheat oven to 375. In large bowl, combine flours, baking powder, and salt. Mix. Drain pineapple and reserve 1/4 c. of juice. Add juice, egg, milk and butter to flour and mix well. Add sugar, crushed pineapple (all but 1/2 c. for streusel topping) and orange extract and mix well.
Spoon batter into cupcake liners. Top with crushed pineapple and then add streusel topping. Bake for 25-30 min. k

Crisp Bean Burritos



Crisp bean burritos have always been a favorite at Taco Time or Taco Maker. I decided to re-create that version, with of course the obvious differences. However, the crispness of the burrito was very similiar to the Taco Time/Maker crisp bean. When frying these, you can add whatever you like inside to your liking. I used the following ingrediants to make these ones.

Crisp Bean Burritos

1 can Vegetarian refried beans (because it has zero saturated fat)
10 small corn tortillas
chopped onions (optional)
chopped red pepper (optional)
shredded cheese (optional)
olive oil for frying
Combine onions and red peppers to beans.

In medium sauce pan or skillet, heat olive oil, and then begin frying tortillas (you can opt to microwave the tortillas, but I found the tortillas fold better when first fried. Once tortillas are fried for about 1 minute, remove from pan and place on plate. Add bean mixture and cheese if you like, and fold tortillas. Place folded tortillas back in olive oil to fry. You may fry up to 5 at a time. Allow to fry until desired crispness. Burritos are great with salsa and sour cream. Can also add other toppings such as red peppers, cheese, lettuce, tomatoes, or whatever else you like.

Creamy Cauliflower


My mom introduced me to this recipe and now I am set on this recipe for good. Creamy and delicious, it's texture resembles mashed potatoes. If you would like to be creative, add cheese, or any other toppings you like. I thoroughly enjoyed every bit of this healthy and tasty recipe.

Creamy Cauliflower
1 head of cauliflower
1/2 c. of *plain greek yogurt
1/4 tsp. salt
1/4 tsp. pepper
Paprika on top

Steam cauliflower and then add to blender or food processor. Add yogurt and puree until smooth.
*My mom recommends greek yogurt because it's creamier for this recipe. Greek yogurt can be purchased at Costco, Harmon's, or Natural Grocers.

Easy Cream Pies



If you have strawberries and/or bananas, and want to make a pie, these easy cream pies won't take much time at all.

For banana cream, either make your own pie crust or purchase pie dough. Use banana pie filling mix, chop bananas and place bananas over baked pie crust. Add filling and then add cream on top.

Favorite whipped cream
1 pint of heavy cream
1 T. powdered sugar
1/2 tsp. vanilla
Beat on medium low speed until set. Let chill until ready.
Once done, spread a layer of cream over the banana mixture. Garnish top with more fruit.

For Strawberry Cream pie
Do the exact same as with banana cream. Add strawberry glaze to chopped strawberries and spread over baked pie crust. Add whipped cream and more strawberries.
chill for a couple hours.

Strawberry Fruit Roll-Ups




We are just lovin our food dehydrater I'm telling ya. But to make these delicious roll-ups, you really don't need a food dehydrator. But they may turn out better if you use one. These roll-ups came out tart, sweet, fruity, chewy, you name it. I love these babies.

To make these roll-ups, follow these simple directions: (you can use any fruit choice you like) For food dehydrator.

1 bag of frozen strawberries or about 4 c.frozen or fresh fruit
1/4 c. of concentrated strawberry or mixed fruit juice (don't add water)
add to blender and puree until liquified. Pour in food dehydrater as pictured. Takes about 10 hours. When done, cut and roll up.

For Pineapple do the following:
put 1 can of pineapple chunks into blender. Don't add juice. Puree until smooth. Pour on greased surface of dehydrater. Optional: sprinkle with cinnamon.
